    Getting Enough Food

    This was the time period that was around World War 1. Food was incredibly important for fighting the war. It was important for military personnel to be well fed to have energy. This was also during the time period that the US was developing its food systems, and building a way to provide enough food for the US and other countries.

    Learning To Get By

    Many Americans started to love protein, fruits, and vegetables. They also learned how to substitute foods for fat reduced foods. They used applesauce and bread crumbs as substitutions. Fats were still scarce due to the war which made it difficult to cook.

    Trying New Things

    More women joined the workforce, those one pot casseroles gained more popularity with the Americans. New products were being made and technology was unable to keep up.

    Food Safety

    The government started to provide more assistance regarding food safety. The FDA and the USDA started to control the quality and safeness of food more. They really started to watch closely and make sure it was all safe to eat. This was also the time period that food nutrition labels came into affect.

    Consumption and The Changes

    Americans started to have preference in which foods they are consuming. Seasonal foods, started to be imported outside of the regular season. New testing methods were developed to identify food borne organisms.
