Nasce come officina e negozio, di carattere in prevalenza artigianale, come quella:
- del faber tignarius=falegname
- del faber ferrarius=fabbro ferrario
- del marmorarius=marmista
Era una sorta di ristorante o trattoria di una sola stanza -

It was a kind of a restaurant or a type of one-room tavern. -
Si passò poi alle tabernae vinarie e a quelle specializzate nel consumo del vino e del pasto
