Harvest
Once the winemaker decides grapes have the appropriate sugar level and acidity, grapes are hand-picked. -

Crushing
Berries are gently squeezed, skins are broken and start to release the contents of the berries. -
Cold Maceration
The must or grape juice is transferred to tanks where temperature is controlled so that fermentation does not occur.
