Then spices were added to pickling to make clever recipes. They say pickling may have been originated by using wine or beer since they both have low pH. Greece used quince and mixed it with the honey. They would dry up the fruit and packed it tightly into jars. Thats when the romans stared to cook the quince and honey. Since the north did not have enough sunlight to dry fruits they would heat the fruit with suger. -

When it cools it creates a vacuum seal. The seal helps so microorganisms won't recontaminate the food. Canning was newest food preservations. Nicolas Appert discovered when applying heat to a jar with food it preserved food from deterioration. -
