    several new methods of artificially drying food, or dehydration were invented in Europe at the end of the eighteenth century. in the early 1800's a French inventor named Masson tried cutting vegetables before drying them. his partner Chollet, invented a mechanical warm air system for drying the vegetables, which were then compressed under high pressure.

    rural population continued to grow in the late 1800's, the urban population was growing much more rapidly. majority of Americans lived in rural areas in 1900. many of those Americans had settled on the plains in the 1800's. rainfall in the late 1800's and the promise of free land under the homestead Act drew easterners to the plain.

    industrialization resulted more in food waste, many cities did try to combat the problem through the development of canning. this process was first invented in 1809 by Frenchman Nicolas who won competition run by Napolean to create a method of preserving food for the French army.
